And their occasionally horrifying combinations.

I do have more substantive blogging to do, but first the important stuff. Bagels.

Growing up we most certainly did not eat bagels. Northern New Mexico is known for a few culinary specialty foods, but without Jewish or Polish heritage there was no reason for bagels to thrive or even really exist. I know when I lived in Albuquerque the Einstein Brothers chain* existed, but they weren't a major part of the food scene. And of course those locations offered a variety with green chile baked into them**, which tells you all you need to know about our bagel knowledge.

So when I crave a bagel these days, I'm most likely to just pick up a standard half dozen from the freezer case at the grocery store. Are they great? No, but after toasting and applying cream cheese they are just fine.

The problem I have now is the mechanically pre-sliced bagels are sometimes horribly uneven. Today's bagel featured one half that was far too thick and another that didn't even form a full circle. I'm thinking I should actually seek out real bagels from bakeries I can slice them myself, and hopefully with greater accuracy. And as a bonus, in DC there are places that sell "authentic" quality bagels!

* Probably not known for being high quality either, but again, how could we tell the difference? :)
** New Mexicans put green chile in almost everything, whether or not it's a good idea (seriously, do not drink this; it is heinous).

I still haven't finished my current cache, so real bagels will enter our household next week. :)
